Best Biscotti recipe [Nutella involved]

Even though almond biscotti are some of my favorite biscotti cookies ever, there is another biscotti recipe I’d like to talk to you about today.

Actually not only one Italian biscotti recipe but I’d like to share many (4 recipes)!

I love Italian biscotti, in fact I love all biscotti cookies, even though biscotti in Italian already means cookies so saying biscotti cookies, to me, it’s like saying cookies cookies 🙂

I will tell you my “philosophy” on Italian biscotti in this brief “auto-interview” which is to the point and I hope you’ll enjoy it.

Why do I consider biscotti recipe like Italian desserts?

<<Because I love to eat a couple of Italian biscotti after lunch or after dinner with my coffee, just like I would do for any other kind of desserts>>.

Why do I love biscotti cookies so much?

<<Because I love baking them with my Grandma, it’s fun and bonding, the whole house smells like cookies which I find so welcoming and heart warming>>.

When do I prefer to eat biscotti?

<<So, as I said I consider Italian biscotti, or biscotti cookies however you’d like to call them, like Italian desserts to eat after a meal. But I mostly enjoy them with tea and coffee either as a morning or afternoon snack.

Grandma and I bake biscotti cookies when we have family gatherings, or friends and neighbors over at our house.

Believe it or not, just like you would imagine an Italian Grandma, my Italian Grandma, from Tuscany, eats biscotti with caffellatte (warm milk and coffee) at night before she goes to bed>>.

Which is my  favorite ingredient to make biscotti recipe?

<<I believe chocolate is my number one ingredient. I can’t think of biscotti cookies and not think about chocolate at the same time. But if you want a more specific answer to that, I’d say Nutella (chocolate and hazelnut spread) is my favorite ingredient to make a biscotti recipe.

Now, let’s start baking!

  • #1: Grandma’s special Coffee bean biscotti recipe

Ingredients you’ll need:

1-1/2 cups flour
2/3 cup butter (room temperature)
2/3 cup brown sugar
1/4 cup cocoa powder (bitter, no sugar)
1/8 cup coffee
1 tsp coffee powder

Procedure:

  1. First you’ll need to make coffee (make sure you make a little extra to drink while baking :-)!).
  2. In a bowl mix butter and sugar until smooth and frothy.
  3. Keep stirring and add liquid coffee (make sure is cooled off otherwise it will ruin the dough).
  4. Add coffee powder as well.
  5. Mix flour and cocoa powder aside, then add it to the mixture and stir well until your dough is homogeneous.
  6. Work the dough with your hands to form a compact loaf. Wrap it and refrigerate for about two hours.
  7. After two hours cut the dough in small pieces of about 0,55 oz each. Work each piece to form an oval flat shape (like a coffee bean).
  8. Place your coffee bean shaped dough on a baking sheet and, with the point of a fork or a knife, carve the shape of an “S” on each one of them.
  9. Place the baking tray in the refrigerator for about 30 minutes.
  10. Preheat oven at 350°F. and bake biscotti cookies for about 15/20 minutes.

Timing may vary depending on your oven so check your cookies to make sure you don’t burn them.

Now let’s try and bake another special cookie recipe I have for you…

  • #2: All-Italian extra virgin olive oil biscotti

Ingredients:

2 cups flour
1/4 cup the highest quality possible extra virgin olive oil
2/3 cup brown sugar
2 eggs
1/4 tsp baking powder
1/2 tsp salt
lemon zest (1 medium sized grated lemon zest will be enough)
1 tsp vanilla
2 egg yaks

Procedure:

  1. In a glass bowl mix eggs and egg yaks with sugar.
  2. Keep mixing and, at the same time, add extra virgin olive oil.
  3. Add lemon zest and vanilla, mix well.
  4. Add flour, salt and baking powder and mix until all ingredients are well blended.
  5. Work the dough with your hand to form a compact loaf. Wrap it and refrigerate for about a half hour.
  6. Flatten the dough with a rolling pin until about 0.20 in thick.
  7. Now you can choose your favorite shape of cookie cutter and start cutting the dough to form the biscotti cookies.
  8. Place them on a baking sheet and bake in preheated oven at 375°F. for about 15 minutes.

Timing may vary depending on your oven so check your cookies to make sure you don’t burn them.

I named this biscotti recipe “All-Italian” because the main ingredients it’s extra virgin olive oil which gives them a delicious earthy taste that I personally love.

These are simple yet delicious chocolate biscotti.

  • #3: Simply delicious chocolate biscotti cookies

Ingredients:

2 cups flour
8 oz dark chocolate
2/3 cup brown sugar
2/3 cup cold butter
2 egg yaks
1/4 tsp baking powder
1/2 tsp salt

Procedure:

  1. Start by cutting dark chocolate on a cutting board and melt it following the bain-marie technique.

This technique is really easy to follow: boil water in a bigger pot, place chocolate in a smaller pot and place this smallest pot in the bigger one (the one that has boiling water in it) so that the pot in which you have chocolate is not in direct contact with fire. Make sure water doesn’t spill in the chocolate pot!

Once melted, let the chocolate cool off before you use it to prepare this biscotti recipe.

  1. In a glass bowl beat egg yaks.
  2. In another bowl mix flour and butter, then add sugar and melted chocolate. Add yaks to the mixture and mix with a fork.
  3. Add baking powder and salt then mix well. You can use your hands in order to obtain an homogeneous dough but make sure you do this fast otherwise the warmth of your hands may ruin the dough.
  4. As in the other biscotti recipes I’ve suggested before, wrap the dough and refrigerate it for about a half hour.
  5. Now you need to flatten the dough with a rolling pin but please use two sheets of baking paper (one on the surface and one on the bottom) so that the dough doesn’t stick to the rolling pin.
  6. Now you can choose your favorite shape of cookie cutter and start cutting the dough to form the biscotti cookies.
  7. Place them on a baking sheet and bake in preheated oven at 375°F. for about 10 minutes.

Timing may vary depending on your oven so check your cookies to make sure you don’t burn them.

You can even freeze some of the dough if you want, so that you have it ready to make chocolate biscotti next time!

  • #4: Mouth-watering Nutella biscotti recipe

Ingredients:

1 egg
1 jar Nutella, you’ll just use some spoonfuls for the decoration
and 3/4 cup for the preparation the rest you can enjoy on bread!
1 cup flour

Procedure:

  1. Mix Nutella and the egg.
  2. Add flour to form a dough.
  3. Roll small pieces of dough (about a tbsp each) and shape them in small balls.
  4. Place your balls of dough on a baking tray, previously covered with a baking sheet.
  5. Press each ball gently with your finger, just in the center to create a light hole.
  6. Bake in preheated oven at 350°F. for about 10 minutes.
  7. Take you cookies out of the oven, let them cool off then fill the center of each one of them with a spoonful of Nutella.

This was a very easy biscotti recipe yet simply irresistible. Prepare them for someone you love and they’ll love you even more.
