Sometimes though we opt for lasagna rolls and what I love about them is that you can really satisfy everybody’s taste with lasagna rolls because you can choose to make different versions like lasagna rolls with zucchini, lasagna rolls spinach, classic lasagna with tomato sauce and minced meat.

According to the taste of your guests and family you can choose vegetarian or other lasagna rolls recipe.

Lasagna rolls is a typical Italian dish and even though its traditions are found in the two regions of Umbria and Tuscany is now widespread throughout the whole country from north to south.

Traditionally it’s made for special occasions like holydays and family gatherings.

If you’d like to prepare lasagna rolls recipe easy all you need is lasagna pasta, béchamel sauce and then you can vary among different ingredients. My Grandma says that lasagna rolls with béchamel sauce is a real family traditional comforting food.

We prefer to make homemade béchamel sauce here is Grandma’s special recipe for you to make a delicious béchamel sauce to use for your lasagna and lasagna rolls recipe.

  • Béchamel Sauce

You’ll need:

1/2 cup butter
3/4 cup flour
a pinch of salt
33 fl. oz. milk

Heat milk in a pot on low heat. In another pan melt butter.
Add flour to melted butter and whisk until smooth.
Add this mixture to heated milk little by little and whisk vigorously.
Cook on low-heat for about five minutes, until the sauce almost boils and gets thicker. Add salt.

The béchamel is now ready for you to use. Let it cool off before you use it.

Making lasagna rolls recipe easy it’s something you can do because once you know the basic procedure then you simply have to choose the stuffing each time.

Once you’ve decided the ingredients you’d like to use for the stuffing, the game is easy. You simply have to put the stuffing in the center of each lasagna roll – each pasta square (each lasagna) – and put them side to side in a baking pan. Cover them with your delicious homemade béchamel and bake for about 40 minutes to one hour.

Here is a lasagna rolls spinach recipe I’d like to share with you today.

This is a lasagna rolls with cottage cheese that I find particularly delicious and tasty.

  • Lasagna Rolls Spinach


fresh spinach (about 4 cups)
1/3 cup Parmesan cheese
extra virgin olive oil
1 garlic clove
1/4 cup cottage cheese
salt and pepper

Sauté garlic in a skillet with a little extra virgin olive oil.
Add spinach and sauté on medium-high heat until water is reduced.
Let spinach cool off then add cottage cheese and mix well.
Add alt and pepper to taste.
Preheat oven at 425°F.
Use this spinach creamy mixture to fill each lasagna square and roll it.
Place each roll in a buttered baking pan, pour béchamel and spread grated Parmesan cheese on top.

Bake for about one hour, until thoroughly cooked and until the Parmesan cheese forms a lightly golden crust on top.

If you want to make lasagna rolls with zucchini you can follow the same recipe and replace the spinach with the zucchini. I cut zucchini into rounds whenever I make this recipe.

The more classic version of lasagna rolls is the one with Ragù sauce (minced meat and tomato), sausage and béchamel sauce.

  • Classic lasagna rolls

Here is the recipe for you to try. You’ll need:

lasagna pasta squares
1/4 Ib beef minced meat
1/4 Ib sausage meat (just the meat inside the sausage)
1 cup Parmesan cheese
1/2 cuo butter
1 onion
tomato sauce
extra virgin olive oil
freshly ground black pepper

Bring salted water to a boil and cook the lasagna squares for about 4 minutes.
Lay them on a surface – neatly separated – to let them dry and cool.
Meanwhile follow the recipe to prepare your béchamel sauce.
In a skillet sauté thin sliced onion with butter and extra virgin olive oil.
When onion is lightly golden, add minced meat and sausage meat. Stir well.
When all meat is cooked add tomato sauce, salt and pepper to taste and let cook for about 15 minutes. Keep stirring from time to time and if the sauce gets too thick add a half glass of warm water.
Turn off the heat and add half of your béchamel sauce.
Season with salt and freshly ground black pepper and add half of the grated Parmesan cheese.
Mix well and let cool off before you stuff your lasagna pasta.

Preheat oven at 425°F.

When the sauce is cooled off place a spoonful of sauce in the center of each square and roll it then place it in a baking pan.

Pour remaining béchamel sauce on top and spread grated Parmesan cheese then bake for about 40 minutes, until thoroughly cooked and until the Parmesan cheese formed a lightly golden crust on top.
