What is actually the first thing that comes up to your mind when you think of Mozzarella cheese?

To me it’s Pizza. Even though there are limitless Mozzarella cheese recipes the first thing I think of is Pizza. Probably because I love Pizza and just the thought of a warm and fragrant Italian Pizza with stringy Mozzarella cheese on top makes my mouth water.

First there is a difference we have to consider when we talk about Italian cheese.

Some cheeses are aged, or need to age like Parmesan Cheese for example. Other cheeses are half aged like some kind of Pecorino cheese. And then there are cheeses like Mozzarella cheese that are fresh and they don’t last long. Other fresh cheeses are: Stracchino cheese, Ricotta cheese, Burrata cheese just to mention a few.

The Mozzarella cheese production is a very interesting thing: to make fresh Mozzarella cheese the curd needs to be kneaded with the hands.

But you have to know that not all Mozzarella cheese is created equal. In fact one of the most appreciated type is the Buffalo Mozzarella cheese which is made from a different quality of milk and it is actually juicer that the most common Mozzarella cheese made of cow’s milk.

There are also different shapes: you can find the classic shape of Mozzarella Cheese which is rounded and medium sized, or you can find one that is twisted or even fresh Mozzarella balls.

Mozzarella is a classic Italian food and a typical product of the region Campania in southern Italy.

As I mentioned before there are limitless Mozzarella cheese recipes.

In Italy some recipes that involve Mozzarella cheese and tomatoes are called “alla pizzaiola” which means Pizza style.

Even though these recipes don’t have anything to do with an actual Italian Pizza they are made with the two main ingredients of a Pizza and that is why they are called “alla pizzaiola” or Pizza style.

Like this Pizza style meat for instance which is one of the recipes using Mozzarella cheese that you can try.

This recipe comes from my Italian Grandma who loves meat and always tries to find new recipes to make more interesting and delicious meals.

Here are the necessary ingredients to make it:

– 2 Ibs veal meat, minced
– 1 onion
-1 garlic clove
– 1 tbsp capers
– 1 Ib ripe tomatoes
– 1 Mozzarella
– fresh basil leaves
– extra virgin olive oil
– salt
– pepper

Procedure to make “Pizza style meat”:

  1. Put minced meat in a bowl, add salt and pepper and mix with a fork.
  2. Add extra virgin olive oil and mix well.
  3. Finely chop basil leaves, garlic clove and onion and add the mixture to the meat.
  4. Dice Mozzarella cheese and set it aside.
  5. Grate tomatoes, using the wider side of your grater and drain excess water.
  6. Preheat oven at 400°F.
  7. Oil a baking pan or a casserole and pour the meat mixture on it. Gently press with a spoon.
  8. Pour grated tomatoes and some extra virgin olive oil on top of the meat and bake for about 15/20 minutes.
  9. Take out the meat from the oven, spread diced Mozzarella cheese and capers on top.
  10. Bake for another 5 minutes.

You can serve this Pizza style Meat as a main course with some potatoes on the side if you’d like.

There is a very strange Mozzarella recipe I would like to talk to you about. I say strange because of the name of this recipe in Italian is “Mozzarella in carrozza” which literally means: “Mozzarella on the carriage”.

It’s actually a fried Mozzarella cheese sandwich and it is a delicious traditional Mozzarella cheese recipe from Naples usually served as a starter or as an appetizer.

Mozzarella cheese

Don’t ask me why it is called Mozzarella in carrozza ( meaning “on the carriage”) all I know is that to make this recipe you put Mozzarella cheese between two slices of toast bread and so the bread holds the Mozzarella inside and this is how it is supposed to serve as a carriage for the cheese.

Some say that the stringy melted Mozzarella cheese recalls the reins of the horses used to guide the carriages. 🙂

Anyways here is the actual recipe for you to try:


– 2 slices of toast bread shaped in two triangular (the classic sandwich shape)
– 1 slice Mozzarella cheese
– 1 egg
– breadcrumbs
– fresh chopped parsley
– salt
– pepper
– olive oil
(I wouldn’t use extra virgin olive oil for this particular recipe because it’s fried and extra virgin is a bit too strong to use  for this purpose)

Procedure to make “Mozzarella in carrozza”

  1. Mix fresh chopped parsley with breadcrumbs, add a pinch of salt and pepper and set it aside.
  2. Using a fork lightly beat the egg.
  3. Pour olive oil in a skillet.
  4. Put the slice of Mozzarella cheese in between the two slices of bread. Make sure that the Mozzarella is smaller than the bread slices and that it is not overhanging.
  5. Quickly soak your sandwich in beaten egg on both sides and then coat it in breadcrumbs.
  6. As soon as the oil is hot enough fry your sandwich on both sides until golden and fragrant.

To make sure that olive oil is hot enough drop some breadcrumbs in it and if it bubbles it means that is ready.

  1. When your Mozzarella cheese sandwich is ready take it out of the skillet and dry excess oil with a paper towel.
  2. Add more salt and pepper to taste and serve hot!

This is also how you can prepare Mozzarella cheese sticks.

Use the same ingredients – except the bread – and coat Mozzarella cheese in beaten egg and then in breadcrumbs and fry it until golden.

The only difference in the procedure is that I prefer to make a thicker and crunchier crust simply by coating the Mozzarella sticks twice.

Procedure to make Mozzarella cheese sticks

  1. Mix fresh chopped parsley with breadcrumbs, add a pinch of salt and pepper and set it aside.
  2. Using a fork lightly beat the egg.
  3. Pour olive oil in a skillet.
  4. Quickly soak Mozzarella cheese in beaten egg on both sides and then coat it in breadcrumbs. do this twice.
  5. As soon as the oil is hot enough fry your Mozzarella cheese sticks on both sides until golden and fragrant.
  6. When your Mozzarella cheese sticks are ready take them out of the skillet and dry excess oil with a paper towel.
  7. Add more salt and pepper to taste and serve hot!

These were very rich Mozzarella cheese recipes for you to try but if instead you want to try something lighter – for a quick lunch for example – you can make a fresh and delicious Caprese salad.

This is simply Mozzarella cheese and tomatoes seasoned with oregano, salt, pepper and extra virgin olive oil.

Mozzarella cheese

Even though it is a very simple recipe everyone has its own style when making it. Some people dice both Mozzarella cheese and tomatoes and then mix them in a bowl and season it. Some other cut slices of Mozzarella and tomatoes and lay both ingredients in circle on a plate and season it.

Recently I’ve seen a different way of serving Caprese salad and I thought it was really well presented. It was a big sliced tomatoes and it wasn’t sliced all the way through but just enough to hold the Mozzarella cheese in between. Very nice!

My Grandma likes to make Mozzarella skewers simply alternating cherry tomatoes and small fresh Mozzarella balls.

There is another Mozzarella cheese recipe that you should try and it is a Pasta recipe with fresh grated tomatoes, black olives and Mozzarella cheese.

It is so good because all the ingredients that you use to season this Pasta recipe are fresh and the Mozzarella cheese will melt with the heat of the Pasta and blend itself with fresh tomatoes, black olives, basil and extra virgin olive oil.

Mozzarella cheese

Here is how you do it:

– your favorite choice of Pasta
– black olives
– fresh tomatoes
– Mozzarella cheese
– extra virgin olive oil
– salt and pepper


  1. Bring water to a boil like you would do for any other kind of Pasta. Add salt.

You can choose any kind of Pasta that you prefer to make this mouth-watering Italian recipe.

  1. As soon as the water boils pour in Pasta and let it cook for about 10 minutes.
  2. Meanwhile grate tomatoes, using the wider side of your grater and drain excess water.
  3. Finely chop fresh basil leaves and dice Mozzarella cheese.
  4. Pour Tomatoes, black olive, diced Mozzarella cheese and chopped basil leaves in a porcelain bowl.
  5. Add extra virgin olive oil, salt and pepper.
  6. As soon as Pasta is ready drain it in a colander and then pour it in the bowl with the seasonings.
  7. Stir and serve right away!

Mozzarella is a real Italian classic.

You can make a huge variety of recipes using fresh Mozzarella. You can make more traditional dishes like seasoning Pizza with it or preparing Mozzarella cheese sticks. While some recipes are really easy and quick to make like Caprese salad, some require a little more time and preparation like my Grandma’s Pizza style meat.
